Method of Preparation

Cook raisins in water until all the water is evaporated and allow it to cool. Add applesauce, eggs, liquid sweetener and vegetable oil. Mix thoroughly. Blend in soda, flour, cinnamon, nutmeg and vanilla and mix well. Pour into a greased tube pan and bake at 350 degrees for about 50 to 60 minutes or until it is cooked. Flavorful low sugar diabetic cake is ready. Serves about 20. Each serving equals to 1 bread, fruit and 1 fat exchange.
