Beat the egg well and then add vanilla, sweetener together. Spray the microwave dish with 2 cup of non-sticking vegetable spray. Arrange bread cubes and raisins in dish, Pour the milk mixture over bread to moisten each cube. Sprinkle nutmeg over top and microwave on high for about 5 minutes or more until it is ready. If you insert a knife in the centre and it should come out clean. Now the delicious bread pudding is ready to eat. Do not overcook.
