Method of Preparation

Take a bowl and beat the eggs. Add milk, oil and stir well. Mix flour, sugar, baking powder and salt. Add the dry ingredients into egg mixture until the flour is moistened. Batter should not be completely smooth. Gently mix zucchini and basil. Fill in greased muffin caps about full. Garnish with cheese. Bake them for about 20 to 25 minutes at 425 degrees and get ready to taste the delicious zucchini-basil muffins. This makes about 10 to 18 muffins depending on the size of the muffin.
